Ingredients

  • 8 slices french bread cut into one inch thick slices or enough bread to give you 3 cups bread cubes after toasted.
  • 4 cup butter, melted
  • 1 cup green peppers, diced
  • 1 cup onion, diced
  • 2 cloves minced garlic
  • 4 large eggs
  • 2 medium tomatoes, each sliced into 4 thick slices
  • 1 cup Mozzarella cheese, grated
  • 1/4 cup Parmesan cheese, grated
  • 1 Tablespoon olive oil
  • 1 Teaspoon salt
  • 1 Teaspoon pepper
  • fresh basil leaves for garnish

Instructions

  • Preheat oven to 400 degrees. 
    Brush melted butter on both sides of the french baguette slices.  Place the bread on a baking pan, place in the oven. Turn the slices as needed to get both sides crispy and brown. 
    When the baguettes have cooled, cube the slices ( I cut each slice into 4 cubes. ). You should have 3 cups of baguette cubes. Set aside.  Reduce the oven heat to 350 degrees.
    Place one Tablespoon of olive oil in a medium size saute pan. Add the diced onions and peppers to the pan, saute until slightly caramelized. Add the minced garlic to the pan, cook another minute while stirring. Remove from the heat, set aside.
    Lightly butter an 11x9 inch baking dish. I used an oval baking dish that was 11x9 inch with deep sides and it worked perfectly.
    Beat 4 eggs in a large mixing bowl until well combined. Place the bread cubes, sauted onions, , peppers and garlic and salt and pepper into the bowl with the beaten eggs. Toss to combine. Place the mixture into your casserole dish in a single layer.  Place the tomato slices over the bread cubes. Top the tomatoes with grated mozzarella and Parmesan Cheeses. 
    Bake at 350 degrees for 30 - 35 minutes until bread cubes and cheeses are lightly browned. Serve immediately. Refrigerate leftovers.
